Sensible Broccoli Casserole

Greetings:
When I began eating more sensibly, my fear was that I could no longer eat my favorite foods.
Buzz! Wrong! It's as easy as falling out of a tree when you know what ingredients to substitute.

In the Midwest, we grew up with either broccoli or green bean casserole drowning in can of toxic Campbell's soup, flavored with High Fructose Corn Syrup and copious amounts of salt.

It's immoral that Campbell's comes out with a pink can of soup to raise money for breast cancer research when they themselves are part of the problem, not the solution.

What Happened to the Hippocratic Oath?

Because of what they eat, India has the lowest rate of Alzheimer's in the world.

Unfortunately, prevention is not very popular in our modern system off health care. The idea of a patient healing themselves, threatens their ludicrous income.

I cannot recall how many allopathic physicians have ridiculed me at the mere suggestion instead of a processing liver irritating anti-inflammatory drugs over delicious turmeric and ginger. At home we put turmeric and fresh ginger in our food because of their scientifically proven ability to control inflammation. I tested it on myself, and it works.

Turmeric makes terrific Cuban style yellow rice. Make it with brown rice. OK? Toss in some well drained organic black beans. Many times when we could cure ourselves we scurry to a physician with a pill mentality.

Recently, a physician approached me and said , "Hey, did you know that trans-fats are bad?' A ,...duh., I told you ten years ago and you laughed at me. So go in the other room and make love to yourself.

If PCP's (Primary Care Physicians) had a more open mind and less ego, perhaps they could actually learn about the power of whole food, teach pro-active health care and develop a relationship with the patient.

Pills ravage peoples livers and lives. Recently, my liver and arthritis were both acting up. After a week of using turmeric in our food and hot Ginger Tea, I've had considerably reduced pain. What happened to "First, do no harm" that is stated in the Hippocratic oath ?

President Bush Supports Sugar and Obesity

Leading English scientists accused the Bush administration in 2004 of putting the interests of powerful American sugar barons ahead of the global fight against obesity. What a surprise that Bush would deal behind the backs of the American People that support his War.

The Holiday Paradox

Merry Christmas to Everyone:

Here's a little paradox that we, ...er I, need to solve. Why is is that when the most sacred of all holidays come around, (Christmas, Hanukkah, Festivus, Kwanzaa, Easter, Thanksgiving, and New Years as examples) do we eat foods that we know are bad for our health and could contribute to a heart attack, obesity, diabetes, and only God knows what? Talk about Dissing your Creator.

"Lord Bless this food to the nourishment of our Holy Temple". It'll need blessing for your Earth Suit, which may not be used to such rich and forbidden foods we do not normally eat. We feel heavy after we indulge then get sickly and green. Sweets are my downfall. I still refuse to partake in any meat, cheese, cigarettes and cocktails. I did enought of that during the first half of my life.

Why do we,..er, I cave. I suppose that I can increase my aerobic time to one hour and eat an endless variety of fruit, vegetables, beans, and Quinoa for a week. For a week after the holidays drink lots of fresh ginger tea with turmeric and you'll assist that liver of yours that you trashed over the holidays. You'll fell so much more whole.

No one is perfect except our Lord who's birthday we celebrate. Do your best, just try not to make cheating a habit again. You can do it.

Disease is Profitable--Health is Proactive

With as many hospitals these days as there are convenience stores, one could conclude that 'they' know something we don't. With the schools feeding our kids cheap, toxic food and Madison Avenue smart bombing them with advertising encouraging them to eat dead food, hospitals will soon be overloaded with a 20 and 30 something pandemic along side the aging geriatric generation.

Blinded by profit, we've lost our moral compass and our humanity for our fellow man. We go to church and worship God, but during the week, all bets are off. Cafeteria religion, I call it.

After chatting-up a variety of patients and folks who have done time in a hospital, they vehemently complain about the prices charged and physician insensitivity. They are unconscionable. They've got us by the short hairs. Money and arrogance go hand in hand. Ever try to have a decent conversation with a physician with out them talking down to you?

I've concluded that its more profitable to allow Americans get sick with diabetes, cancer, or heart disease than it is to implement proactive prevention. I think the allopathic folks are great at triage and dispensing symptom-masking medication, however, if the sickness is due to poor nutrition, then what good is a pill? On a positive note, there is a growing population of savvy physicians that have concluded that processed food seasoned with preservatives causes disease.

Learn how to use food as medicine and each time you eat, ask yourself, "Is this food feeding me, or depleting me?" You can do it. Food from the Universe is powerful medicine.

Ginger and Turmeric: Marriage Made In Heaven

Here we are in the midst of the holiday season that won't officially be over till January 2, 2008.
Then the longest, most grueling part of winter begins and spring cannot arrive soon enough.

To keep warm and toasty on cold damp days, make a daily cup or thermos of Ginger and Turmeric Tea. Other than a roaring fire, nothing will warm you up and detoxify you quicker . Ginger's warming effect on our physiology has been documented for nearly 5000 years.

One caveat, however, do not boil the ginger tea with the maple syrup in it. Put the gift of the tree in last, otherwise you can create 'Ama' or internal toxins. Use fresh, not powdered ginger. More than likely it has been irradiated. Get your organic Turmeric from a health food store and put it is soup, stews, rice, whole grains, bean dishes, smoothies, or anything you wish. In addition, ginger and turmeric are powerful anti inflammatory and will quell your arthritis pain. Pineapple contains compounds that relieve inflammation, so also make pineapple part of your diet. Unless, of coarse, you dig pain.

1. Bring water to a boil, then add herbs. Simmer for 10 minutes.
2. Strain tea into a mug, add maple syrup and lemon, stirring to combine. Drink warm.

A 'Fowl' Proposition

The Nutrition Action Healthletter occasionally releases their list of the 10 foods we should never eat. May I share one common entree for your personal edification? Thank you.

Ruby Tuesdays "Fresh Chicken and Broccoli Pasta" appears appealing until you read the ingredients. It is described as white meat, steamed broccoli, penne pasta, tossed in Parmesan cheese sauce and then baked with a covering of Wisconsin Cheddar Cheese. Ah, ha! They had me till they got to the Parmesan cheese sauce. Wisconsin Cheddar cheese is the finest in the world, but it is still fatty. Be prudent.

Brace yourself against something solid for when you hear about the fat content of the perceived 'healthy dish'? I mean, how much damage can heavy cream and saturated fats oozing across the dining room floor cause?

The dish the Center for Science in the Public Interest refer to the entree as 'Angioplasta' contains a mind-blowing 2,060 calories with 128 grams of artery detonating saturated fats. The article goes on to say that since the fat is mostly dairy, about 60 to 70 of those fat grams are probably saturated. http://www.cspinet.org/nah/index.htm

The last thing I want to do is hurt Ruby Tuesdays reputation and bottom line. Order the dish, but tell the waiter to hold the cream sauce and cheddar, and ask for grated Parmesan and coarse black pepper. Now, you've got a less than lethal dish and Ruby Tuesdays retains a happy customer. A win-win. Hot pepper flakes get your blood going so if you're on date, OO-La-La dude or dudette.

There are millions of health-savvy chefs in America doing outstanding jobs of teaching customers as well as employees how to enjoy vegetables from the Universal Apothecary. Except that guy that tosses vegetables in duck fat before he roasts them. A foul proposition not quacked up to what it could be.

Fries and Chips Cause Cancer?

The Associated Press reports that California is suing fast food, snack firms to get labels stating the possible risk of cancer. Attorney General Bill Lockyer ask for a court order requiring McDonald's, Burger King, Wendy's, Frito-lay, and other companies to warn consumers that their fries and chips might contain acrylamide, a chemical the state says causes cancer.

Lockyer said, "I know from personal experience that, while these snacks may not have a necessary part of a healthy diet, they sure tastes good." Is that all America cares about? Taste?
Anti-Freeze taste sweet, but I don't think you'd drink it.

In the 90's the chemical was thought of as an industrial agent, used in food packaging and to treat sewage according to the US. Department of Health and Human Services.

High Meat Consumption=Cancer Risk

Why is it they we just don't get it? Are we that selective?

How many of you were grossed out by the hamburger commercial where two macho, brawny men were snarfing down an enormous hamburger with two patties of beef and 4 pieces of bacon, and then cheese to add insult to injury. Since when do they advertize heart attacks on a bun?
Maybe that's why all these hospitals are being built.

Who ever created THAT commercial definitely has stock in the company and is a bit on the mentally disturbed side. Meat is macho, my butt.
It takes a brawny, courageous person all the bravery they can muster to eat a little ole carrot.
You knew, of course, there is no fiber in meat. Just ask Elvis Presley. The King. His autopsy is on line.

I catered for NBA Charters for 16 years. They think eating too much red meat takes away from their performance. Meat takes a ton of energy to digest. Eating vegetables to save your life, improve your job performance and mental clarity is not for Sissy's.

"Red meat and processed meats (bacon, sausage poultry sausage, lunch meats, cold cuts, ham, hot dogs and low at hot dogs) have been associated with elevated risk with colorectal and liver cancer," said lead author, Amanda Cross, an epidemiologist at the National Cancer Institute.

Odd how our moral compass gets out of whack when it comes to making profitable TV commercials by appealing to certain markets.

I just can't visualize the Prince of England stuffing his face like a heathen, chewing and enormous amount of artery detonating fat and waisted, empty calories, with his mouth open and sauce dribbling down his cheek. Gross! Great roll model for the kids, dude.

Army Mess Hall Meals_Nutritional Disaster

Good Morning:

Sitting here reading the morning paper while eating my oatmeal cooked with fresh cranberries, cinnamon, and apple cider, I came across an appetite dulling story from the Army Times.

The headline reads,"Mess hall meals can be recipe for fitness disaster". It reports that US troops gain an average of 10 pounds upon deployment. There is little opportunity for exercise as they set around and watch their stomachs grow and their energy levels drop.
Not a sane recipe for success, but the American way. Shameful of our government to serve crap to our soldiers so large conglomerates can prosper from war. Go ahead, get blind drunk on your Manhattans, beat the wife, and kick the dog, and don' tyou dare think about our troops.

Who was it that said an army fights on it's stomach? They feed our warriors endless mountains of pastries, double pork chops, mashed potatoes or hush puppies, overcooked, frozen vegetables. Wouldn't an MRE be better. :) The Army report goes on to say they can eat ice cream till it comes out of their ears. (Star News Service)

Those in control of the menu selections say the responsibility falls on the soldiers. "No one forces them to eat". How absurd and ignorant. They are told to make better food selection choices, but when the food options consist of processed, Government approved, ..wink, nutritionally bankrupt processed garbage, our soldiers are less than effective.

Hey, School Supers-The Senate Disagrees

Reuters, (Dec.5,2007) reports that high-calorie snacks and sugary drinks would be banned in school stores and vending machines under a proposal that Senate sponsors called the broadest overhaul of food sales rules since the 70's.

I have to belly-laugh because I was black-balled from the frightened Carmel Clay School and Lawrence Township school systems cafeterias. This was told to me by the school cafeteria manager at Lawrence. They were vehement in their refusal to let me, the Indy Star, and others into the kitchens to see what they are serving the students. WHAT ARE THEY HIDING?

Any moron must know that this creates a suspicious scenario. The Indy Star has repeatedly asked for a breakdown of all the foods and the even the Indy Star keeps getting put off.

Educated folks care about the vitamin content as much as the damaging ingredients used to preserve the food. The vitamin content is moot if the other ingredients are poison containing unpronounceable, chemically derived ingredients . Food dyes, especially the sinister Red Dye #40 causes aggressive and violent behavior in children, yet we shove Ritalin down their throats.

This was reported last week by the London Daily. Quite sinister and uncaring of local educators to blow off solid science for the sake of their paychecks. These are the educators that need to take inventory of their souls and ethics.

If you put a DR. in front of your name, you sure better be prepared to back up the reasons for serving 'DEAD' food and have an educated, un-biased, science based, adult discussion. But alas, they have closed the doors even to tax paying citizens who pay for the 'Nutritionally bankrupt" food and fear for the future health and well being of their loving children.
We'll pray to God for the awakening of your hearts and the development of ethics!

Holiday Excess and Heart Attacks

Christmas Holidays are a time of joy and celebration! We celebrate all our holidays eating copious amounts of delicious home made foods that were made with family love.

This year make 'moderation' your mantra. The Associated Press released a story in today's Indianapolis Star that the Holidays are a recipe for deadly heart problems. None of us want that, do we? A 2004 study by Vanderbilt University confirmed it is a nation-wide phenomenon with peaks in death coinciding around the holidays.

We can't be to busy to take care of our cardiovascular health. Here are a few tips:
  • Don't forget your medications.
  • Avoid eating heavy meals with stress the heart and digestive system.
  • Back off on the salt, please.
  • Drink in moderation. Alcohol makes our hearts pump harder to get blood to our peripheral arteries. Avoid the egg nog.
  • Too much alcohol can trigger irregular heart beats called atrial fibrillation which can cause you to stroke out.
  • Exercise, especially as it gets colder.

Remember, hospitals are short staffed over the holidays, so immediate care takes longer.

Sacrifice Doesn't Exist When Cooking Health

Well, the TV show went well this weekend. I demonstrated my famous Apple Cider Oatmeal with Omega 3 & 6 essential fatty acids we need for heart health. I used steel cut oats because our Quaker buddies processes the goodness out of the once nutritious oats. Might as well eat the box. I swear, those executives check their brains at the door when they come to work.

Now I use Organic Steel Cut oats that take a bit more time to cook, but nothing good comes from anything instant. Slow down, folks, and smell the oatmeal.

I used sweet apple cider as my liquid medium, then towards the end I added cinnamon, cranberries, blueberries, a pinch of salt, and a tablespoon of fibrous wheat germ to keep the pipes flowing. Finally, I topped it with chopped walnuts, loaded with the Omega's. What a tremendous way to start your day.

Sandi and I also like to eat Tacos, but the corn shells on the grocers shelves always have trans-fats in them. Several days ago, Sandi came home with a box of taco shells and I immediately picked it up to read the ingredients label, not the nutrition label. Wow! No trans-fats, so lets' have some tacos for Sunday lunch. The brand is Garden of Eatin', Yellow Corn Taco Shells.

First I put in the seasoned meat , topped it with cheese and put it in a pre-heated oven for a few minutes for the cheese to set. Then we topped them with diced red onion, tomato and shredded romaine. See, you do not have to sacrifice your favorite foods to maintain your health.

I browned off some LIGHTLIFE original meatless veggie crumbles and added cumin, chile powder, and coriander to it with a little sea salt and pepper.

Taco Hell, as I call them serves meat filling cut with textured vegetable protein, and the re-fried beans are loaded with artery coating pig fat. If you need to use re-fried beans, look for the vegetarian version that doesn't use lard; the fat of a dead barn animal.

Volunteer-You'll Live Longer and Happier

Yesterday I was honored to be the Keynote speaker at a church in New Castle, Indiana. It's a lovely farming town full of decent, hard working, God fearing folks; the salt of the earth.

My topic was 'Volunteerism" as the event was to fete 250 church volunteers that go out in the community to help those not as fortunate or who might be experiencing hard times. Every age group was represented. They were an energetic, loving, caring group that made me feel quite at home. Their menu: Fried chicken, mashed potatoes and chicken gravy, green beans, ice cream and cookies. These are all traditional foods we have innocently eaten and enjoyed all our lives and consider part of our culture.

It is my belief that if we eat food that was designed for us by the Universe, we can be the best we can be for others and for God. It's always a bitter pill to swallow the facts that food can either develop us to be our best, or bring us physically and mentally down, render us ill, and possible do us in.

My question to everyone is, for example : If , from medical science news, we gleen that certain foods can cause cancer, heart disease, hypertension, diabetes, or obesity which can cause death, then is eating these foods a sin? After all, we are stewards of our Earth Suit that houses our soul as it preforms life's work. In this case, volunteerism.

You know why they call it shortening? It shortens your life. Just think. Folks fry chicken, which is already loaded with artery-detonating saturated fats, in the melted lard of another barn animal, a pig. Keep in mind that all the chemicals, antibiotics, growth hormones end up in the fat of animals and humans. Yummy. What does that say about the composition of the delicios gravy we've been putting over our mashed potatoes for decades...Potatoes that were prepared with butter and whole milk? The Perfect Storm? Time for and oil change?

Revolting Food-Save the Children of the Future

After repeatedly watching two Toyota commercials promoting insurance fraud by destroying your old car to get a new one, it makes it easier to digest why folks are so desensitized to deceiving, misleading advertising by soulless, mega conglomerates. Remember how they used to say cigarettes were good for you?

They obviously think we are stupid and whacked out on anti-depressants so we don't care. At least that's what Aldous Huxley believed when he authored the classic, Brave New World.
But we are much smarter than they think. Correct.

Thomas Jefferson once said that every 20 years we need a good revolution to keep this country honest. A food revolution before it is too late to help the children of the future.

Boogers and Greens

While shopping recently, I was standing next to a couple who was going through the produce to make a dinner selection.

"Now Bill, you know what the doctor said. You've got to eat a plant based diet unless you want to get heart disease. How about this spinach or kale, they are full of nutrients," she suggested.
Her apple-shaped, burly-burly man husband wasn't down with the plan and snidely remarked,
"I'd rather eat boogers than green food".

Dark leafy green contain calcium 1110% of your daily vitamin K for strong bones, 294% of your daily vitamin A needs, Vitamin C, Iron, Omega 3, B vitamins, and 65% of your daily folate needs. Other compounds in green leafy vegetables help prevent macular degeneration and cataracts, so loosen up a tad and give them a shot.

Helpless to stifle a chuckle, I broke out into a full blown belly laugh.
Now I might expect that from a child, but from a full grown man. Keep in mind, the strength it takes to overcome bad eating habits is what's really macho, not eating red meat three times a day. That's what we call obsession.

Science says that each time we eat red meat, we do immediate arterial damage. If you plan on eating meat till the day you 'meat' your maker, at least half you plate should be piled high with fresh vegetables. Canned vegetables do not count and are nutritionally bogus.

Buy your meat and produce from local sources and contribute to the local community.

Red Meat Preserved with Carbon Monoxide

The FDA and the overly powerful meat industry has come up with yet another monstrous method of exposing red meats to carbon monoxide as what they refer as,"pigment fixative" to treat meat in order to help it retain it's redness."

As any Integrative physicians will tell you, this is just another way the industry is deceiving you. Would you want to eat a two year old steak? I doubt it, but you've eaten them already, kind folks, along with cloned meats. If the Cosmos didn't create it, then we should reconsider putting it in our Holy Temple. Red Meat Causes Breast Cancer

Red meat has been shoved down our throats since we were kids. There was no other choice in the 50's. We were weened on 'dead cows' in the Midwest. As you may recall, each year, Dad would take us to pick out a black Angus and had it slaughtered for out culinary enjoyment. It was conveniently packaged and marked for content. As a vegetarian for 20 years, looking back...very bizarre.

Recently while awaiting the dentist, I sat down next to a gal who was wearing a pink cancer T-shirt indicating she took part in the 'Run for the Cure". If you think about it, that's' like closing the barn door after the cow got out.

I proposed to her that instead of focusing on the cure, they should organize a "Race for Prevention" instead. Makes much more sense since science has proven that consuming red meat causes Breast Cancer. Hello, anyone home? Add the word, Pro-active to your vocabulary and develop a solid relationship with your Integrative Health Care physician.

Water Your Going to Do About Dehydration

Water, water, everywhere, but not a drop to drink.

Humans are 85% water. We are so blessed to live on a beautiful, blue, water planet. Without water, all life would die. So why is it so challanging to get people to drink, clean, filtered, cleansing water? God's gift to us.

To avoid dehydration, the Earth Suit requires between one and seven liters of water per day. Our brains are mostly water, so it's logical that a lack of water would cause a person's thinking process some real glitches.

An excessive amount of salt, sugar, or protein in our diet requires more water to process. Also, some other symptoms of dehydration are thirst, dry mouth, lethargy, stress, and mental confusion. Sound familiar?

When dehydrated, the level of energy generated in the brain is decreased. I read on the Internet that depression can be a result of dehydration. That IS depressing.

Total water intake includes drinking water, water in beverages, and water in produce. Sorry, soft drinks, caffeinated beverages, Gator-aid, and alcohol do not count. Excessive sugar in our diet requires more water to process. Booze dehydrates us, and caffeine, a diuretic encourages dehydration. Approximately 75% of Americans are dehydrated and our Earth Suit adjusts unnaturally leaving you less than you are. We need water, not diet coke or coffee, to flush toxins out our systems and keep our thought process and the plumbing running smooth and clean.

Water covers 71% of the Earth's surface, mostly in oceans and other large water bodies, with 1.6% of water below ground in aquifers. Saltwater oceans hold 97% of surface water, glaciers and polar ice caps 2.4%, and other land surface water such as polluted rivers and lakes 0.6%. That leaves approximately 3% to divvy up between agriculture, industry, and American households.
And the piddley 3% for us to split 3-ways is grossly polluted by big industry.

Water is the most essential element in life, yet I cringe when I overhear people say,
"I don't like water, give me a soft drink". Hardly an even swap.

In recent years, new alarms have been sounded about growing water scarcity and contamination and the likely inability to meet the water requirements of rapidly growing populations (Postel 1992, Gleick 1993, Engleman and LeRoy 1993). Just ask shameless Monsanto and the US Government, the two biggest polluters in the US if they have grand kids or even give a crap. Not when money is their god.

Cool Whip Antidote--READ LABELS PLEASE

If you read my previous blog on the mind-boggleing ingredients to Cool Whip, you might be asking yourself, "What the heck can I use if I don't want the saturated fats from REAL whipped cream?"
Here is your simple solution. Just don't make a big deal out of it at supper and let the compliments flow. Sometimes we must be lovingly sneaky.

Low Fat Whipped Cream Substitute
about 4 servings

5oz can evaporated milk
2 tbsp cold water
1 tsp unflavored gelatin
2 tbsp Stevia or Xylitol (Not Nutrasweet, Splenda, nor Sweet n' Low)
3 tbsp non-hydrogenated corn or safflower oil.

  • First, get the milk to a very cold temperature to whip. Even put the mixing bowl in the freezer. This is easiest done by pouring it into a shallow tray or ice cube trays and placing in the freezer until you see crystals begin to form around the edges.
  • While the milk is chilling-out, combine the gelatin and water in a small dish, without stirring. For five minutes, place the dish in a small saucepan containing hot water to allow the gelatin to dissolve.
  • Remove dish from the hot water and allow it to cool. Whip the milk at high speed in a medium size bowl or hand mixer until stiff peaks form. Gradually add the sweetener, oil, and then gelatin mixture. Continue beating until stiff peaks form.
  • Cover and place in freezer for 10 minutes, then transfer to refrigerator. The mixture will become very stiff. Before serving, stir to soften. Will keep 3 days covered in refrigerator.
  • No snitching.

Lies, Lies, Corporate Lies Kill Children for Profit

For 25 years I have lived in the Italian neighborhood of Indianapolis where the annual, wildly successful Italian Festival is held each June. What remains of the neighborhoods Italian Matriarchs gather each year and sequester themselves in the parish basement and begin preparing vats of marinara, Alfredo Sauce, Meatballs, Lasagna, Italian sausages, and a plethora of traditional entrees and desserts that are sold to raise money for the parish.

One day last June, one of my favorite geriatric Italian women and I were talking and the subject of trust came up. "Wendell", she said in her thick Italian voice, waving her aging, bony finger in my face, "Don'ta trusta nobody. Always remember".

And boy was she right in so many ways. We can't trust anyone in the FDA, EPA, wayward ministers, Priests, corporate clones, hospitals, advertisers, marketers, drug companies, product labels, pro athletes,...you name it. When money enters the picture, ethics make an hasty retreat: Even if you are spiritually inclined. The human equation.

Cargill voluntarily recalled nearly 1 million pounds of ground beef linked to possible E.Coli contamination, its second recall this year. And Topps Meat Co. in September issued the second-largest recall in U.S. history -- 21.7 million pounds of ground beef -- that put the New Jersey-based meat producer out of business. They screwed up by trusting that the H.A.C.C.P inspections put into place were actually being enforced, otherwise these recalls would not occur. Almost weekly, we read a about a horrific recall of some food or another that could harm our health and kill our children and it's mostly human error and greed.

Cruel Whip Vs. Cool Whip

Cruel Whip Topping vs. the Real Thing

After giving a speech at Anderson Heart Hospital, a 50’ ish woman with serious heart disease approached my podium to ask me if Cool Whip was bad for her heart “How much do you eat,” I inquired. She struggled to pull and oxygen tank behind her with a tube running into her nose.
“Oh, about a half a tub a day,” she softly responded.

After picking my jaw up off the floor, I explained that Cool Whip Topping contains man made ingredients that lead to heart disease. Wired magazine: issue 15.05 states that water and air are the main ingredients. Next there is the blandness factor. Since blandness is a trade, snicker, secret, the company doesn’t have to disclose the specific flavorings. It is also made with our nemesis High Fructose Corn Syrup which has been associated with obesity and the plague of diabetes. Wired Magazine suggests since HFCS is known to make lab mice fatter than other diets, so, as they say, keep your lab rats away from the Cruel Whip.

It is fake, full of air, so you are eating mostly water and air for just over twice what it would cost to whip real cream yourself. I don’t care if you have carpel tunnel, it’s still the lesser of two evils in moderation. Of course if you have heart disease and you eat whipped cream, you have a death wish.

Wired Magazine reports that the next ingredients are real doozies. They are Hydrogenated Coconut and Palm oil, plant saturated fats, which if left alone are good for our hearts, but the process of hydrogenation alters their structure. Restaurants have banned using trans-fats in major cities all over America because of its direct connection to causing heart disease. Why can’t man leave well enough alone?

Not sure about you, but I’m crazy over the next ingredient, Polysorbate 60, a precursor to antifreeze, with a fake sugar derivative. The result, says Wired, can be detergent, an emulsifier, or in the case of polysorbate 60, a major condom lubricant. Is this what God wants us to put inside his gift to us?

Next they add a dollop of delicious Sorbitan Monostearate which chemist call synthetic wax and is sometimes used as a hemorrhoid cream. How charming. This substance keeps Cool Whip from turning to liquid. Next they gently stir in Xanthan and Guar Gums which are natural thickeners and retards the formation of ice crystals preserving it’s seductively deceiving fluffiness. You can wrap up a dog log in pretty wrapping, but it’s still a dog log.

I have a suggestion for you. Last night, Sandi and I took a quart of Strawberry Stony Fields Farm Organic yogurt, lined a fine-mesh strainer with a dish towel, and plopped in the yogurt. Then we placed it over a bowl to catch the whey put it in the refrigerator for about an hour or over-night. When the whey drains off you are left with a creamy, tasty substitute for cream topping without all the synthetic chemicals. Got it?

Chef's: Doctors of the Future

Just got back from being on-air doing my segment, Eat Right, Now on the local CBS affiliate.
These appearances have been going on for the last 15 years because I stood for something.
Food is medicine, just as Hippocrates, the father of medicine, said in 400 BC.
I'd say we've strayed a tad.

Today I cooked an Indian street dish of curried turkey, with grated ginger, garlic, soy sauce, red and green peppers, cilantro, fennel seed, green onions, then topped it with a large dollop of low fat plain organic yogurt. Then I tossed it all with Soba noodles made from Buckwheat so those who are gluten intolerant can still enjoy their pasta. The dish is a riot of appealing colors.

AS I arrived at the TV studio at 7 AM this morning I noticed they had another chef on in the 6-7 AM slot. There is plenty of room for everyone. His name is Bruce Starr, and he is the executive chef of McCormick and Schmick's Seafood Restaurant. We gravitated towards each other, extended hands and made introductions. Our conversation extended to outside the studio door where we both agreed that if ALL American chef used their podium to promote better eating habits and ingredients, we could change the world. Half the population eats out 75% of the time, so we have a captive audience. I like this guy's attitude. He sees the future and that restaurants are getting more crowded than ever.

Conclusive scientific research has proven, without the shadow of a doubt, that trans-fats cause heart disease and High Fructose Corn Syrup causes obesity and diabetes, ...so why serve them?
If we know heavy cream causes heart attackes, take it off the bloody menu.
Chefs can be the solution to out American health plagues, not part of the problem.
So, before Chef Bruce and I parted ways, we admitted we need to do something to turn the tide.
I was proud to have met him as I have not kept up getting to know all the great new chefs in town.

Restaurants Kill 4000-News at 6

My dear friend Tony, 75, came to visit this AM with Holiday Greetings. He, as millions of Americans, have been keeping track of young American soldiers deaths in Iraq. The total has crested 4000 young men and women.

Now, digest this. The FDA releases and annual report regarding how many people in America die annually eating in restaurants due to cross contamination and food born illness: 7 million a year get sick eating in restaurants, 325,000 need hospitalization, and 4-5 thousand die. Why don't these figures ever reach mainstream media and why is it not considered just as devestating? Oh, yeah, ...Amereican politicians think they know what's best for everyone, but they cannot prevent 4-5,000 largely avoidable deaths inside their own borders. Shhhhh.

Tony said he asked his cardiologist if she ever heard of Wild Oats or Sunflower Grocery and the Doctor had not. That says it all. They and their massive ego's, do not want us to learn how to avoid a heart attack. Why do you think hospitals are popping up like tulips in spring. Anticipation and greed.

A vast majority of Americans are more knowledgeable about food as medicine than the nutritionally illiteratet doctors, so the physicians tell us we are wrong. Ignorance kills. All they need to read in Omnivores Delima or Diet for a New America, and they'll transcend their ancient-minded ways and become REAL healers of the Universe, not a pharmaceutical clone. Again, man can not improve on God's work. Man is the most destructive, arrogant, and greedy carbon based mammal on the earth. The Universe weeps.

Darfur--Don't Forget Our Brothers and Sisters

This is the first Thanksgiving that my wife and I have spent alone since, well, I can't recall.
The parade is blaring on the TV, the aroma's from the kitchen are intoxicating, and the cat and dogs feel the joy in the air. We are deeply blessed.

Let's not, however, forget our brothers and sisters suffering in Darfur as we eagerly scarf down our traditional 2400 calorie meal then make a bolt for the recliner. We are a world community that gets caught up in commercialism, the American past-time, overlooking those suffering throughout the world who need our help and prayers.

Gravy is not a beverage and other Tid Bits

As a red-haired, freckle-face, Midwestern fundamentalist, gravy was a huge part of our eating tradition. If you think of it, gravy is pure fat tightened with a butter and flour roux. "The Perfect Cardiac Storm" I recall Grandpa pouring gravy on his pie, cottage cheese, and anything that didn't move. Gravy was a part of every meal.

My take: why ruin the flavor of a perfectly cooked piece of moist turkey with a sauce other than Cranberry ? In the early Americas, sauces were invented to cover up the flavor of rancid meats. How appetizing. You know why they call it shortening? It shortens your life.

Anyone know why Oleo was invented after the turn of the century? To fatten up turkeys before they went to market so they would get a few extra bucks for their birds. TODAY SOME FARMERS USE ARSENIC TO INCREASE THE BIRDS APPETITE. Yummy!

Well, much to their dismay, the oleo began to kill the turkeys. Remember WKRP and the turkey debacle? And that's how Margarine got into our food supply. They added yellow capsules to mix in with the white oleo and then the makers touted it as better than butter.
HOW CAN PEOPLE SAY SOMETHING MAN BY MADE MAN IS SUPERIOR TO FOOD MADE BY THE UNIVERSE! SUCH SICKENING ARROGANCE.

Boogers over Greens

As a chef, I shop a lot and have found it interesting eavesdropping on other conversations. Recently, I over heard a burly manly, man and his wife perusing the assortment of spinach, kale, collards, and mustard greens. She was begging him to try greens for the sake of his health.
He stated that he hated green food, "and would rather eat a gooey booger than spinach". What a Bluto, eh?

Hope he enjoys macular degeneration, osteoporosis, and glaucoma.

Iceberg Lettuce, relatively speaking, has the same nutrients as this piece of paper.

A Very Dangerous Women--HFCS is Poison

Sorry, but I just have to go back to that horribly misinformed RDA, Kim Galeaz, that I ran into at O'Malias, grocery, although she works for Kroger and does TV spots for them. I ask her if she was familiar with the Kroger Health Food Section? It is the best health section in any Indy Grocery. (except Good Earth and Wild Oats) She hadn't a clue what I was talking about, so obviously, health is not an issue with her yet.

As you recall, in the middle of a competitors store, she vehemently, bordering screamed at me that High Fructose Corn Syrup and Trans-fats were not bad for human consumption. Spittle was coming out of her mouth. I was so embarrassed by her actions.
"Wendell, who told you that High Fructose Corn Syrup and Trans-fats are bad?" she enquired.
"Physicians, scientists, oncologists, diabetes specialist," I answered.
"Well, they don't know what they are talking about, these all exist in nature," she screamed.
"Yes, Kim, but is minute portions. Your grabbing at straws. Kim, let's just agree to disagree, but she still wanted to spar.

I submit: Almost all nutritionists finger high fructose corn syrup consumption as a major culprit in the nation's obesity / diabetes crisis. The inexpensive sweetener flooded the American food supply in the early 1980s, just about the time the nation's obesity and diabettes rate started its unprecedented climb.

Every seven years, our cells replace themselves. When they rebuild do you give them new dime store Chinese made cells, or do you supply your Earth Suit with high quality American plant foods that your physiology will be able to comprehend and utilize. Factory food made by greedy, grey haired, Manhattan swilling, out of touch Fat Cats is virtually 'dead' and supplies our biochemistry with inferior materials to restore this magnificent gift; the human body. Eating devitalized food accelerates the aging process and also devitalizes our family.

How you feel right now is directly related to what you just ate. If you ate a delicious stack of Buckwheat Pancakes with Cranberries and REAL Vermont Maple Syrup you'd feel energized and mentally sharp. For instance, if you ate a Danish Pastry chased by a Coco-Cola or Mountain Dew, then by 10 AM you have an energy shortage, struggling to stay awake till lunch. Meanwhile, the competition lapping you. Sugar is addictive ust like heroin and cocaine. First you're up, then you're down. Now you need more. It's a vicious treadmill of zoom, crash, and burn.
There is also emerging research indicating the sugar fertilizes cancer. That'll mess up a lot of heads.

Chicken Tartar Anyone

We eat sushi blow fish, steak tartar, drive without seat belts, bungee jump, base jump, we drive without seat belts, walk across the street without looking, sex at 8, smoke or inhale cigar second hand smoke, drink and drive, eat school lunches, have sex at 80 MPH, eat hamburger, and many other treacherous activities. As humans, we are addictively self-destructive, adore tempting fate for the Adrenalin rush it gives us. We place our kids in the hands of public schools where they are poisoned with government approval at lunch, we drive without seat belts over crumbling infrastructures , and I dare say that some die hard carnivores, just to be cool, gaging down chicken tartar: 'Haute Cuisine' of the next generation of Foodies.

How come it takes 'till we are deathly ill or dieing, before we put proactive prevention into place. Savvy Allopathic doctors will tell you that disease is primarily caused by bad genes or by a nutritional decency. That's what it took for me. I got hit in the head with the Holy-2-By-4.
God wasn't finished with me yet. I had a mission. A mission from "Gaad"

I'm a chef; Hippocrates, the father of medicine said in 400 BC that food is medicine, ergo, chefs are theoretically the doctors of the future. In an imperfect, turbulent, world, where everything is allegedlly perfect ...tradition blindly dictates. The masses want to eat crap because, simply, it taste good. That's what food represents to most folks. Instant oral gratification during times of stress.

Guys who don't eat food with zinc or manganese generally experience ED. ED is also caused by blood flow blockage similar to that of someone with heart disease. So, what you eat affects your the flow of ALL your plumbing. Before I would tell someone to take Viagra, I'd suggest two weeks of a normal dose of Zinc and manganese. (Quinoa seed, is full of zinc as well as nuts and oysters.)

Your entire food paridgm will change after digesting Diet for a New America or Omnivores Delima. Educate yourself in the nuances of caring spiritually, mentally and physically for the most generous gift from the Universe: the Holy Temple; transcend fear with love. Let the future saturate itself with waves of exciting awareness and discovery that will gradually unfold. Taste, savor, and utilize. Dead Animal Fat linked to Cancer

Our credible friends from The American Institute for Cancer Research and the World Cancer Research Fund have concluded that NO amount of processed meat is completely safe to eat.

And forget about aromatic bacon, sausage, lunch meat, pepperoni, smoked salmon, and hot dogs. No amount is considered safe to eat. Re-read that sentence to be sure it sinks in, unless you have a fondness for leukemia.

One third of these cancers could be avoided with weight control, regular physical exercise, and healthful eating choices. It's not that hard and you can do it.

Did I just hear someone screaming out, "Well, you gotta die from something". The ultimate cop out.

Cheap School food is Poisoning our children

It seems we no longer live in a free country.
After scores of readers, students, and faculty at Carmel Clay and Lawrence Township School System wrote to me asking to help them get the fatty, chemically infested food changed within the school system. I approached the Schools System Administrator and received a flat 'NO'. "You can meet our wonderful students, but you are not allowed into kitchen, the walk-in refrigerator, nor the dry good storage" Why?
This 'lady' has DR. in front of her name so I figure she's fairly intelligent and has a solid set of ethics. Not just me, but my editors talked to them and they got the run around too.
Doesn't the Freedom of Information Act relate to this situation. This begs and yells the question, WHAT ARE THEY HIDING. It is going to explode very soon.

Members of WTHR 13, The Indianapolis Star, and myself have been black balled as the head of the Lawrence Township School System angrily screamed at me. A considerable over-reaction announcing they have something to hide on the ingredient labels.

Get pissed, make calls, and demand that you become privy to what the school system is placing into your child's body when you are not around. It is you rightand priviledge.

It is repugnant to think that budget decides the health of our children. Karma is bitch.
Maybe I should explain Karma to you, because you apparently don't care or refuse to acknowledge that food you all are serving is making our children fat and violent. (red dye #40)

Money and Biased Information Kills-HFCS

It was an ugly scene. I just returned from shopping for groceries where I ran into an RDA, who represents the soy bean and pork council of Indiana. Several summers ago I was speaking at the State Fair grounds to 300 people. When I was finished, this gal literally ran up to me, pointed her finger in my face, and said I shouldn't be bashing those 'pesky' trans-fats as she called them. Huh? She loves to fight and instigate confrontation. You know the type.

Well of course she's defending hydrogenated soy oil...that's her job. Why then, did NYC ban it? Because it has been directly connected to heart disease. Soy is slow suicide, and I do not encourage anyone to eat it. The NIH did an 11 year study that says when we eat too much tofu, for example, we will enter dementia sooner than later. (Dr. Lan Wright) We are bombarded enough these days by estrogen. Plus, processed soy meat substitutes are no better than commercial, assembly line food.

Now, she is telling the American pubic that they are getting too worked up over this 'Pesky' High Fructose Corn Syrup fear. With friends like her, who needs enemies or enema's.

She refutes conclusive scientific evidence from the Cleveland Clinic, Mayo, Berkley, and Harvard studies. THAT'S why people get so confused. She is abusing her podium and missing a great opportunity to help people avoid diabetes and obesity. Money changes everything,...yeah, baby.

Ethereal Oatmeal Recipe-Colon Pow!

Every Fall Sandi and I buy as much local sweet Apple Cider as we can since apples have been found to have thousands upon thousands of antioxidants in the skin and flesh. plus the taste of cider is Nirvana. We also benefit from the abundant availability of fresh cranberries. They bogg me down, but that doesn't stop me. Their dark skin indicates powerful antioxidants and bladder protection, plus they taste so darned good. McCann's Oatmeal made with just water is boring so we use apple cider, cranberries or blueberries, sea salt, and chopped walnuts full of omega 3 prior to serving. The breakfast does not need sweetener and stands firmly by itself as a heart healthy, weight loosing, energy providing meal. Sneak some wheat germ in there and you can call it "Colon Pow". Fiber rules~

Here is the recipe:
  • Irish Oatmeal, Steele Cut. None of the Quaker processed glucose.
  • 4 cups of fresh Apple Cider
  • Pinch of sea salt.
  • Add one cup of oatmeal and stir well.
  • Follow cooking instruction and place the fruit in 3/4 through the cooking process.
  • Serve hot and top with a handfull of chopped walnuts. A real gastrointestinal food-gasm.

Vitamins-My Favorites

If the FDA had their way, a single vitamin C pill could cost you $100 bucks. That's the main reason they are trying to discredit the vitamin industry; they want a big chunk of the 11 billion dollar health food action. Granted there are plenty of bogus vitamin peddlers, but don't throw the proverbial baby out with the bathwater.

Food Dyes and Preservatives vs. Children

What is in our food and why are food makers playing "Fool the Shopper"?
Did someone say greed.

Poor health and nutritional defincies are common among young criminals. New research indicates that the link is more than coincidental, and that treating health and diet problems may be one key to preventing behavioral problems and even criminality. Children killing children.

World-Wide scientific research links hyperactivity-a strong risk factor for criminality-to nutritional deficiencies and food allergies. Some artificial food dyes and preservatives may trigger hyperactive behavior in children. We've seen it reported on the world news.

The risks from these insidious contaminants are unacceptably high especially for infants, the hyperactive, and school children. Ritalin is not the solution; transcending our abysmal Western eating habits is the sensible answer.

Traditional Holiday Casserole Make-Over

This morning was my bi-weekly segment on CBS WISH TV Indianapolis. It is called, Eat Right, Now and has new sponsorship. In Indianapolis I'm the only local chef on TV performing healthy recipes and tips rather than the food that fertilizes disease. WISHTV.com/features/recipes

The local media has assigned me the moniker of 'health food' guru. It's no big deal. It's a result of committing to stand for something, and that is "Chef's are the Doctors of the Future" Suddenly the Cosmos began to open doors to print media and TV opportunities. The on-air studio no longer uses camera men; they use computer robots and it's quite a switch. I use my podium as a celebrity Chef to assist earthlings from all walks of life with weight loss, heart disease, fybromyalgia, diabetes, and cancer prevention using God's Apothecary, Integrative treatments along with allopathic medicine. We need both. When I'm giving one of my many humorous motivational speeches, I tell the audience that I wouldn't be alive today if it weren't for beta blockers.

On today's 'Eat Right, Now' segment I prepared a light version of the traditional Broccoli and cheese Casserole substituting Galaxy International Shredded Cheddar cheese, Campbell's low sodium cream of mushroom soup, low-fat cottage cheese, chopped green onions, egg, whole wheat bread crumbs, and Smart Balance. I get lovingly sneaky and add wheat germ to keep the plumbing moving. Leave off the fatty, crunchy fried onions. I'll put the recipe up Monday. I'm not fond of Campbell's soups, so if you see Amy's brand or an organic selection, opt for that one. Most Campbell's soups contain the insidious poison, High Fructose Corn Syrup and off-the-charts sodium levels.

Give up Cheese: Surely you Jest

As a successful chef for 35 years, I know food fairly well and used to eat more than my share whenever possible. That's why I weighed in at 285 pounds. I now weigh 185 pounds and have never felt better. I lost most my weight when I quit eating cheese.

As I began to study the deepere meaning of food and what reactions occure inside our Earth Suit after we have eaten it, whether it be good or bad; I wanted to know more.

Cheese is a huge factor in weight gain with take-out Pizza's moaning under a mountain of gooey, hard to digest, molten cheese. Foods that are hard for us to digest accelerate the aging process.

Several years back I discovered Galaxy Nutritional Foods Veggie Slices which are cholesterol free and contains o% trans fat. Years ago, soy cheese grossed me out, but this brand cooks just like cheese. It is low in sodium, and contains iron, vitamin E, B6, and B12. It also contains calcium, vitamin A, D, Riboflavin, and Folic acid and also comes shredded for casseroles.
This Holiday season, use it in your green bean or broccolil casseroles.
My wife Sandi and I place it on Ezekiel Bread, spread it with Smart Balance, and make grilled cheese that the grand kids even like. These products can be found at most mainstream grocery stores. I shop at Kroger.

With the exception of Goats Cheese, commercial processed cheese contains just as much saturated, artery detonating fat as meat.

Healthy Holiday Tips from Me to You

Thanksgiving: the day we eat over 2400 calories each. Burp! It’s like a competition of who can eat the most; recreational eating without limits, and then a sprint for the recliner to sleep while watching football, a unique male attribute.

Here are some tips for you to make healthy, tasty, holiday food taste, well, tasty.
Try not to over eat is the first obvious advice and indulge instead on health foods like yogurt smoothies, a vegetable and fruit tray, pumpkin (Not Pie), cranberries, turkey breast, green beans, and baked sweet potatoes with real Maple Syrup. Remember Aunt Jamima and Mrs. Butterworth’s are pure High Fructose Corn Syrup. Enough obese Americans have diabetes II already.

When making turkey gravy, cook the turkey the day before, pull off the meat and put it in the serving pan, wrap tightly and refrigerate. Take the carcass, skin, carrots, celery, onions, dry white wine, and bones and boil the wee-wee out of them for a hardy stock.
Put the stock in something safe and leave it outside or in the garage over night and all the fat and grease will float to the top for you to skim off. Now, you have fat free stock to make your whole wheat stuffing with omega 3 walnuts, celery, and onions as well as your gravy and mash potatoes. Use some of the de-fatted stock to make the mashed potatoes instead of butter and cream. When making gravy with the fat-free stock, PLEASE, use cornstarch slurry to thicken the states favorite beverage. A flour and butter roux is two steps backward. Finely ground up Omega 3 rich flax seeds also act as a thickener.

One cup of stuffing is a whopping 400 calories if you do not de-fat the stock and back off on the butter. One cup of Egg Nog contains, gulp, 343 calories without the booze and 593 with booze. One glass of wine is 120 calories. Dig this; one-half cup of mixed nuts is 440 calories, so you can see how fast this all adds up to the annual belt loosening contest or the Bathroom Sprint.

After dinner, get up and move around. If you spend two hours preparing dinner, you've already burned 295 calories; jogging, burns 372 calories for half an hour if you weigh 160 pounds. Swimming, 309 calories. Cycling, 219 and Walking, 261. Taking a walk with the dog, or playing tag fotball with the grand kids will certainly strengthen family bonds and create warm and fuzzy memories.

Red Meat Causes Cancer

The world worships meat and in some countries, without meat, people would starve. In that situation, eating meat to survive is acceptable. Their animals were fed the way the Universe had planned and our Earth Suit can utilize its composition.
Man has eaten meat since his creation. Meat has been socialized so intensely, that the majority of earthly citizens would rather die than stop eating meat. Live and let live. When I am giving one of my speeches, I never tell people to stop eating meat. That's a very personal decision.
When, however, you read headlines from USA today that research links fat to cancer, you must perk up and take note. The report from the American Institute for Cancer Research and the World Cancer Research Fund found that every 1.7 ounces of processed meat consumed per day increases your risk of colorectal cancer by 21%. Eating processes meat has also been connected to breast cancer. We should have a 'walk' for proactive prevention as well as for the cure.
This is a wake up call for those who eat beef, pork, and lamb, routinely. Meat is not macho, it's what's rotting in your colon. Why? Meat does not contain fiber.

The bottom line: Elvis Presley passed away with 35 attractive pounds of impacted fecal matter in his colon because of his food choices. How charming. He died of drug abuse Heart Attack on the porcelain throne, however he made it onto a US mailing stamp.
The report says about a third of the cancers could be avoided with weight control, regular physical activity and healthful eating choices. Amen, Brothers and Sisters.

Namaste' You'all

My first experience with learning about Ayurveda was disappointingly full of frauds who received their degree on-line. The only positive word I heard was the term 'Namaste'. A beautiful, precious word we all must practice and comprehend in order to bring peace to this troubled world. Unfortunately, every person I've met who practices Ayurveda has been a disappointment; opposite of what they preach; cold, superior, dishonest, and quite frankly, full of ego. They literally loath women and I've seen them treat cancer patients like they were a nuisance. They did not practice what they taught. A Vadja who called himself a healer claimed he new everything about everything. He was nothing but a capitalist philosopher who ate a bowl of himself every morning. We do not need any more charlatans and must rid ourselves of false prophets hampering our cause to heal the word. He had an enormous ego and a lust for cash. Forgive me for getting so worked up. I am positive there are much better examples of Ayurveda followers out there. Even the local publisher and editor of Indianapolis Ayurvedic Publication had a hard heart and an Universe size ego. It's bad karma pretending to be something you are not, especially when it is for profit. I totally forgive them.

Pizza-Cheese is Liquid Meat

How many of you grew up on Pizza. A show of hands. How many threw up after downing a pizza after 12 beers? I certainly did before I transcended my self-destructive eating habits. It was a box of make at home pizza. Ahhh, I recall the gooey cheese and greasy pepperoni, but I know it compromises my health. Pizza wasn't originated to have 20 pound of cheese on each pizza. Good grief!! Of course it tasted ethereal, but all it was made up of was processed white flour dough in a tube, a can of sauce, and a package of Parmesan cheese. The extraordinary amount of cheese on today's Pizza is part of what is making America so fat. According to Grace Slick, Cheese is liquid meat and contains artery detonating saturated fat.

Apparently, thanks to our inattentive and arrogant folks at General Mills, there has been a massive recall of Pizza's around the country that contain E. coli O157:H7. (Web address below) Be aware of these products, especially with those under three and those over 65 who have compromised immunity. Can we no longer trust the food industry with their alluring, albeit, deceiving ads and subtle white lies. Make your demands to the store manager and you'd be surprised how quickly they respond.

Is Gravy a Beverage

It's McCain's Irish oatmeal with sweet wild blueberries for me this AM with a hand full of omega 3 walnuts and organic milk and a mug o' green tea with Sweet Leaf Stevia.
Oatmeal tastes so much richer when using milk plus it increases the protein.
In the 60's I abused myself so much that I've spent the last half of my life undoing the damage I did when I was a young freckled face Midwestern Hoosier boy. Indiana, where gravy is a beverage and Ranch Dressing is their cologne.
I spoke to a small country Christian Church last month about the Bible Diet; what are we designed to consume for optimum performance of the Earth Suit, home of our ever traveling soul. These wonderful down home, salt of the earth, honest folks were riddled with diabetes. The town was quaintly small with a pizza shop and a Rib Joint and I did not see a huge box store where they could purchase a wider variety of healthful foods. These wonderful folks and the rest of America get their information and are influenced with manipulated TV statistics.

When I arrived I met a tall lanky gentlemen with snow white hair who told me he was hypoglycemic or ready for full blown Diabetes Type II. He seemed grateful for the information , but I could detect hesitancy in his eyes. Hoosiers are deeply traditional and dislike change. After my talk, I heard him tell the minister, "Well, there goes our Saturday Prayer Breakfast."
"Why," I inquired?
"Well, for years we've served Pork Sausage Gravy and Biscuits," he lamented
"No offense, but if you want diabetes, that's going to get you there faster."
Bless this food to the nourishment of our body, Dear Lord. You cannot serve the Universe if you are physically compromised

Solution: If they made their gravy out of re-hydrated non-fat dry milk, cornstarch roux, and render off the sausage first and then thoroughly drain the grease, it would be less harmful to their Earth Suit. If you read the label on a box of Bisquick, you wouldn't put this 'Dead"food into your most precious possession; a gift from the Universe. Boco Brand makes a terrific soy sausage that fooled even my grand kids.
As a family, we made fresh biscuits from King Arthur's Whole Wheat flour, and added wheat germ for colon power. It was great family bonding time and the breakfast was outstanding.

Hypocracy at a Cancer Survivors Picnic

Being part of Health Synergies, a miserably failed Integrative hospital, I was asked to attend the Indiana Cancer Center's Annual Survivors Picnic. This was to celebrate remission, those in treatment, and their families. As I approached the picnic area I noticed that the head of the Central Indiana Cancer Center was cooking hot dogs and charred hamburgers on the grill using white bread. On top of that they were serving full sugar coke, and sugary cupcakes. Not a fruit vegetable, or bottle of water in site. They got a $11,000 grant from Eli Lilly, who make cancer drugs.

I felt like Jesus in the money changers temple. BLASPHEMERS!!! Idiotic doesn't give it justice.
"Oh, Wendell, it's just one day and we wanted a picnic theme." he laughingly responded.

"Yes, but you have missed a golden opportunity to teach them a new food paradigm that doesn't cause cancer and other diseases" I reminded him. It was the most irresponsible act by an alleged scholar I've ever witnessed. I had to leave before I freaked out more. My energy was freaking people out. The head told me to prove to him that meat causes cancer and heart disease. I sent him the science, he laughed at me and admitted he loved meat and would never stop eating it.

Remember, this is the head of Central Indiana Cancer Center. Sugar is cancer fertilizer, burnt hamburgers cause cancer, hot dogs cause leukemia, and the cokes cause obesity. The worst part was that Health Synergies alleged Ayurvedic visionary, did not have the spine to defend me.
Charming. That's why it is so hard to make progress when people do not stand up for their beliefs. In Ayurveda, food is considered our destiny.

Another Meat Recall-HACCP Fails Again

It's cold today, the Colts lost to New England, and the leaves are finally beginning to change color. Our dogs hate to go outside in cold weather. The leaves changes color about 2 weeks late this year due to the extraordinary hot weather.

My affirmation today is that positive things will happen this week.

I picked up the Sunday Star and read about yet another beef recall. How many children must we sicken or kill before HACCP is actually enforced, not just catching dust. Keep in mind that one pound of hamburger contains the flesh of at least 100 of our bovine buddies. No steak tartar for me, thank you.

When I catered for the NBA Charters for 16 years, in order to get the account, our kitchen team had to pass a rather stringent exam on Cross Contamination. HACCP, an an acronym for Hazardous Analysis Critical Control Point was created by the odd combo of NASA and Pillsbury to keep astronauts from getting food born illness in space. After all, diarrhea in zero gravity could be a drag. The system is in place, no one likes to follow the strict rules, and Senators claim it is not being utilized to protect the public. Wonder who's getting paid off. Money changes everything.
In America, annually, 7 million good folks get sick eating in restaurants, 325,000 go to the hospital, and 4-5 thousand die from the lack of sanitation enforcement. (USDA)

Are we Guinnea Pigs for Americas Food Industry

The message I wish to share is that this precious gift of a body with so much to offer is not an amusement park and we must eat with gratitude only food that was given to us from the Universe. It is the only language our Genes understand. Our children are industrial Guinea pigs, adults are too busy to read ingredients. They're confused and ton of tasty food out there is causing almost every preventable disease possible to children and adults. We are becoming toxic waste dumps.
These is also an equal amount of food on Blue Earth that can prevent these largely avoidable maladies. Just take what you need from the Universal Apothecaries.

Industrial Food-American Genocide

As a nationally syndicated health columnist with two books and a traveling Motivational Speaker I promote eating nothing but unprocessed organic whole foods from the Universal Apothecary. As a chef, after conquering a Virus in heart lining my sullen cardiologist said would finish me off, I decided to pay back the Universe and use my podium to educate the masses so they can transcend the western diet of government approved 'Dead' food. Food is the generosity of the Universe.

Death can be quite motivating

We all at times wonder why we're here on earth.
In 1988 I was a stereotypical chef in every way. I smoked, drank, and generally treated my body as if it were indestructible. As we all age, we wake up and realize that's a bunch a malarkey. Then the cardiologist gave me days to live and admitted me into the hospital.
Resting heart rate 155, atrial fib, conjestive heart failure, 7 pounds of fluid surrounded my heart, and it had doubled in size from a microscopic virus.
It took The Universe to wallop me up-side the head with a Holy Two-By-Four to get my attention. "Wendell, I'm not done with you yet."
"Y-y-yes God,"
"I need to you quit your debauched ways and help correct America's eating habits."
I walked out of the hospital two weeks later completely healed. Not even scar tissue.
I employed visualization and in my mind's eye, had Pac Man eat the scar tissue off my heart
Who was I to question God? I began reading about how food affects our body as profoundly as a pharmaceutical drugs. The only problem is that our internal biochemistry only understands intelligent food provided to us by Nature. Not 'Dead' synthesized food from a squeaky industrial conveyor-belt. It's 100% about profit over the health of the citizenry with no regard for our children.
When we know something will harm our Earth Suit and we keep repeating the same destructive behavior, is it sinning and disrespecting our Creator? Like eating fried chicken cooked in pork fat? The perfect cardiovascular storm.
