Coconut Oil-



Jamaican Coconut Rice and Peas
Yields: 4-5 servings


Ingredients:
1 medium sized can organic red kidney beans
1 can unsweetened coconut milk (shake well)
2 cups of long-grain brown rice
2 green onions, chopped
1 tbs. ground flax seeds
1 clove garlic, chopped
1 tbs. fresh thyme
1 tbs. organic coconut oil
1 scotch bonnet pepper (whole, do not chop up) or jalapeno, Serrano or your favorite
water

Directions:
Drain the liquid from the can of beans
Over medium heat, cook 2 cups of the brown rice, in 5 cups of water and 1 cup of coconut milk. Place the whole scotch bonnet on top of the rice and boil for 20 minutes, turn off the fire, and place a lid on the pot Meanwhile…….
Add the beans, onions, garlic, thyme and coconut oil, and stir for a minute. Reduce heat to medium-low. Remove Scotch Bonnet or whatever pepper you select before serving.
